The classical and free version of Google Drive only offers list- and tile-view and we are hoping that Google Workspace as a paid version will give us more options?
If not, are there any apps to offer that functionality?
No, the view is the same in the free and paid versions. Nevertheless, Google Drive File Stream will deliver exactly what you are looking for. Maybe you could test that out.
In Google Drive, click on the cog-wheel and you can download Google Drive File Stream easily.
