right now, our users receive an email with the text “You have signed up for an event”, we would like the text to be: “We have received your application”. Is it possible to change this text?

Yes you can do so by overwirting the following keys with a language pack.
net.seibertmedia.plugin.confluence.event-manager.email.participation.added.myself.headline=You have signed up for an event
net.seibertmedia.plugin.confluence.event-manager.email.participation.added.myself.subject=You have signed up for the event {0}
